- 700g Bread flour
- 9g Active dry yeast
- 15g Sugar
- 20g Kosher salt
- 460g Purified water
- 15g Olive oil

Mix together the flour, yeast, sugar, and salt.

Mix water and oil with the dry ingredients.

Knead the dough until it stops sticking and is smooth, about 5 minutes.

Let rest at room temperature 1 hr, then refrigerate overnight.

Remove dough from bowl and divide into 4-6 even portions.

Let rest at least 5 minutes before forming into pizzas.
You can also use 100-150g of mature 100% hydration sourdough starter instead of yeast. You may need to allow additional time for the dough to rise if you use this method.
